软壳糟蛋始于清雍正年间,距今约有270多年历史,“有中国饮食文化一绝”之美称,被誉为“天下第一蛋”。乾隆年间得京牌嘉奖,列为贡品。糟蛋作为地方特产具有丰富的文化底蕴,其间有民间故事,文物考证,独特的工艺,名人字画,众多奖牌……

鸭蛋在酒酿发酵过程中,分解为多种氨基酸,并产生鲜味,此鲜味与醇香、脂香融合为一种复杂的鲜美滋味。所以,食糟蛋是回味无穷的享受,又具有营养滋补之功效。全国著名营养学家于若木对糟蛋的独特风味作了精辟论述,并称为“昔日皇家贡品,今天百姓佳肴”。据专家测定,糟蛋由于经过独特工艺加工,其主要营养成份含量均明显高于其它蛋类。其中蛋白质比鲜鸭蛋高1.1倍,钙、铁高出4.7倍、0.5倍,维生素PP比咸鸭蛋高5~6倍。如果说,蛋类因其营养成分齐全而称为全营养食品之冠,那么糟蛋就自然成为冠中这冠的营养食品。

平湖槽蛋在其槽渍过程中,使所产生的醇、酸、糖、盐等成分逐渐渗入到蛋内容物中的同时,诸多营养素也随之进入到蛋内容物中富集起来,从而使槽蛋的营养含量更加丰富全面(附表一),例如:槽蛋中蛋白质比鲜鸭蛋高过1.1倍,钙4.7倍,铁0.5倍,维生素B1比松花蛋高过2.2倍,维生素PP比咸鸭蛋高5.6倍。
